Sweet Potato and Apricot Croquettes (4 colours)



I'd quite forgotton about these sweet potato and apricot croquettes that I made a few weeks ago. I'm not generally a fan of frying food in oil, but for these I shall make an exception.

Ingredients
Sweet potato - 1 medium
Cooked chickpeas - 1 cup
Spring onions - 4, finely chopped
Dried apricots - 1/2 cup, finely chopped
Pine nuts - 4 tbsp
Fresh red chillies - 1, finely chopped
Fresh basil - 1/4 cup, finely chopped
Fresh dill - 1/4 cup, finely chopped
Egg - 1 large, lightly beaten
Polenta - 1/2 cup
Breadcrumbs - 1/2 to 1 cup
Flour - 1/2 cup
oil for frying
