Black-eyed bean cakes (1 colour)
Dried black-eyed beans - 150g, soaked overnight and cooked
Onion - 1 small, finely chopped
Cayenne pepper - 0.35 tsp
Egg - 0.5
Plain flour - 2 tbsp
Baking powder - 1 tsp
Sunflower or vegetable oil for frying
1) Place the beans in a food processor or blender and blend with 3 tablespoons of water until reduced to a smooth thick paste, adding more water if necessary.
2) Add the onion, cayenne pepper, flour, baking powder and egg to the blender and blend until well combined.
3) Heat the oil in a frying pan. When hot, fry heaped teaspoons of the bean batter for a few minuts until golden on each side. Drain on kitchen paper and serve with a tomato-based dip, salsa or sauce. Makes around 15 - serves 2.
